Honey Wines Australia has had many calls for a plain mead so we did.
This one is a lightly carbonated sweet mead with no additional fruits or spices like our other meads, just honey, water, yeast and a lot of patience.
Made from raw honey from hives located in the Hunter Valley region of NSW.
This mead is 12% alcohol and is sold in a 750ml bottle.
Invert bottle before serving.
We use a tiny amount of potassium metabisulfite to sterilise wild yeast in honey before fermentation starts (as we like raw unheated honey), probably not enough to even worth mentioning but we put it on the label just in case.

Did you know a worker bee only makes about half a teaspoon of honey in it’s life? That is a lot of bees just for this bottle.

I think the mead at the bottom of the bottle is much sweeter than the mead at the top. I only enjoy it when I nearly finished the bottles. Goes too quickly

Over time as more air fills up space in the bottle all wines start oxidising, though there is no more sugars at the bottom of the bottle it can give it the illusion of being sweeter and more syrupy. A small percentage of the population prefers meads in this short window before it goes stale from too much air. For the bulk of Australian tasters this one is already quite sweet but if you prefer even sweeter you might enjoy Polish meads more.
